Climate: While most varietis garlic produce well over the range of Australian climates, if you are after the very best results it is worth considering their places of origin. Some varieties come from cold regions of the world, so they give better results in Southern parts of Australia. If you grow in more tempereate zones (humid or dry), then the Creoles and Xian from China for example should do well. Other garlics such as those from California, Mexico and the Middle East do well in hot dry or maritime climates
Highly adaptable. However, garlic is highly adaptable and given two or three growing seasons in your environment it will surprise you how well many different varieties can grow. While garlic is easy to cultivate, great garlic needs that little extra attention. Give your garlic a little time and good growing conditions and it will not disappoint you.
